Well character themes can be covered in each character's pages in a subsection (more or less like it's done in the FF wiki). As for which music piece should get an article I'm thinking iconic music, that is music that has appeared in at least two games like Dearly Beloved (can't think of another one at the moment). World music can equally be covered in world articles (but I'm not too sure about how much we want each article with music samples).

[1] format should work for most of the songs on the soundtrack, and I can provide some images and sound files for that.
Songs that have special significance to the games, or appear on multiple soundtracks, should probably have an article. So, the opening and closing songs, and stuff like the Atlantica songs and The Other Promise, which appeared on the OST and Drammatica.
Character themes would perhaps work best in a "Music" section on the character's article. They are pretty much the same topic, so there's no reason to give them more than a redirect, unless, like with The Other Promise, they are used as game/trailer themes, like Sanctuary and Hikari were.
